Explore two national culinary classics, the great American cheeseburger and the ubiquitous Swiss Rösti frite. 

Explore how a thoughtful and well-designed cheeseburger can reach new culinary heights in partnership with a simple-yet-elegant take on des pommes de terre frites — “fried apples of the earth.” 

Learn the important 20/80 rule as you assemble a distinguished cheeseburger, keying in on the most suitable size patties and how to cook them perfectly on the grill of choice: charcoal, wood, or gas. Optional customary toppings will be considered with an informed discussion regarding cheeses and a focus on the two best options.

Traditional French fries are set aside as we investigate the tasteful and time-honored Swiss Rösti and how they can nicely pair with a thoughtfully curated cheeseburger. Topping with just a few shavings of Grana Padano (a hard, slow-aged, crumbly Italian cow's milk cheese) adds a nod to their neighbors to the south.

  • Do not bring water bottles. Water will be provided.
  • BARN’s kitchen facility regularly uses ingredients on the FDA’s major allergens list. This class uses: milk (cheese, butter), eggs, wheat.

An $18 materials fee, included in the cost of the class, covers all the ingredients you'll need.

Class Policies

  • You must wear closed-toe shoes and tie back long hair.
  • Ages 14 and up are welcome.
Instructor
Bob Ross

Robert Ross is a landscape architect, garden designer, and committed home cook who has traveled to and worked in many places, absorbing local cultures, history, and terroir. A Loeb Fellow at Harvard’s Graduate School of Design, he spent a few years in North Africa working on a project that afforded opportunities to travel and explore Europe, eventually leading to a passionate connection with central Italy, its people, food, and gardens. He shares a unique perspective that blends simple Tuscan cooking, Renaissance gardens, and ornamental terra cotta.
